As plate protection for the throat (circa 1320) precedes the introduction of the arret (circa 1350)
We can actually find examples of plate protection for the throat as early as the 13th century. For example we find a "collarium ferreum de placcis" in an inventory of 1277 in south Italy.

It looks to me like jupe, jupon, and zupello/zuparello are three different words with three different histories. To me, it's right.
The verb "salvo, as, avi, atum, are" is a little bit odd for classical Latin, but for medieval Latin is absolutely right.

Resipisce and Noli are two imperatives, II person singular.
Peccare is an infinitive.
Amplius and iam are two adverbs (iam is quite useless in this sentece, but the latin of Vulgata is terrible).
