It wasn't only done in the early 15th century. It was seen much later as well. A good painting of this is the c1500 Detail of St. William in the National Gallery in London.

The Vaclav mail shirt is made from both solid and riveted iron links. They have an ID of 5-6mm and are made from 0.75mm wire. The mantle is made from the same type of links as the shirt, but also has riveted links made of solid gold incorporated into it.

They would have been knee voiders just as there were ankle voiders. A somewhat common thing on English harnesses. Notice the gap between the sabatons and the greaves.

Since you are so set on forge welding being done Andrew, what then is your opinion of the bevor from the Gmund harness? Would it not have been better to simply forge weld another piece on the chin during construction than to attach a piece afterwards via rivets?

Actually..., anything from 1.6mm to .8mm will give you a period look. It just depends on which period and which locale. ;)

But, for what you no doubt wish to do, 18 guage (1.2mm) will be just fine.
