You are right, Helm and especially guantlets are usually the sticking points to a decently functioning and looking suit. I made a pretty decent greathelm in my basement. Does anybody here know how to make stainless look like mild or carbon steel?

Are these collars separate items or are they attached to the gambeson? I'm not sure. About the only thing I can tell for sure is they have some sort of fastener (toggle, tie, etc) to bring them snug around the neck. If you look at the Maciejowski bible, most gambesons have high collars and separate padded coifs.
That would solve your neck coverage problems without adding vision problems.
