Where you would have rivits, pass through threaded rod with nuts placed on the inside as you pass the rod through. You will twist the interior nuts into place then put nuts on the exterior. This braces very well. If the surfaces don't meet the rod at a right angle just bend the rod

Yes, there is a huge difference. The 301 is at least twice as resilient though the hardness makes a difference. It's commonly found as 1/2, 3/4 and full hard. 3/4 is more common to use as it can still be shaped....barely.

About the cheapest but good looking body armor would be a Visby style cost of plates. Use heavy canvas (painters drop cloth, two layers) roofing nails for rivits and a traffic sign (old signs usually for free at a state road maintenance facility) or old empty plastic barrels.

You have a large number of small parts, many with simple curves. The parts with the simple curves are liable to twist on you during the quench. This is more likely if you do a water quench. If you are not going to hear treat, use regular (401) stainless and save some cash. While work hardening will add some strength it is minor in comparison to heat treating.
