Remember that depictions of "enemies" in Biblical scenes tend to be more allegorical (more fantasy armour, more scale, etc.) rather than what is traditionally worn in Europe of the piece's time. I dont think you can just say Goliath was viewed as a knight, i would need convincing and some form of documentation other than you just stating it. If he were a knight why is he wearing a kettle, this is not a knightly helmet, and would certainly be below his station. What in the illumination make...
