Remember dogs were also regional. A Shepard dog from England, might be what we'd tink of as a English Sheepdog, big and wolly. A German sheep dog, would be more like a modern Geraman Sheppard. An decent pathologist supposedly can look at a skeleton and determine sex fairly easily. Ok i've seen what looks like boxers made of mail for wearing with certain suits of (i think) 15th C German armour.
