They're a little bit heavier in the hand than a dumbbell of equivalent mass. Choose about a step down from whatever you usually use as a dumbbell to start, probably? This is because their center of mass is not usually in line with your wrist and arm when you're using them, so they exert more torque.

The most protection i wear when working hot is long sleeves (and an apron, close toed shoes, jeans, glasses, and earmuffs)- and they're almost always rolled up above the elbow within 5 minutes of starting work. I would refrain from using any type of tree nut or peanut oil to blacken anything that you intend to sell. You may end up killing your buyer.
