Do you mean the opening in the collar plates for your neck? They need to be rolled/folded; bend under the first quarter inch then pound it flat to the backside of the plate. See:

I wear a pair of standard kneecops under my kneegreaves, hidden by my brachae. I find the kneegreaves that also cover the sides, etc, look very clunky and far too big. I wear a plastic breast and side plates under my mail, it's covered in fabric and I'm attaching pteruges (they used to be on a belt, I'll post pics latter, when I finish the last row of pteruges). It does the job well. The chain does improve it though; it's legal without, but the mail protects bits ...

For my period, I loved Christine McCullogh's series on the later Roman Republic, and Lindsey Davis' "Falco" series (hard-boiled detective in Rome!). Thus demonstrating why spears are so effective in reality. We did a couple of tests at MTT, tossing a pilum at a scutum blank that had been made just like the originals; went right through it, embedded with the point a foot and a half behind the face of the scutum. I've found that the 2" vs. 3" thrusting tips don't really differ when it comes to gaps; if one can get through, so can the other. Rattan tends to not allow good point control due to flexiblity. The one rattan spear I had that did, was almost 3" in diameter, and hit far harder than my fiberglass ones...

What period? Bread is simple; flour, water, salt, yeast. Until very recently, they didn't even add the yeast, it was endemic and most breads were basicly sourdoughs.
