Shield work won`t do it because you use different muscles in different ways with a shield than striking a blow. What I`m having the best luck with is just fighting two sword and two sword pell work. It looks like you live in Meridies, right? While not known for being a hard hitting area, I still would stay away from 16g, especialy in a great helm. Bear in mind that a great helm has little in the way of glancing surface, so most shots that hit are going to give a full transferance into the helm....
