I wouldn't call what can be done with an English wheel "dishing".

It is more along the lines of giving you the ability to create a "compound curve".

Dishing is the act of pounding metal into a recess.

And yes, the ability to work thicker metals 17ga+ is almost non-existence.

The ONLY way to keep buffing dust out of your shop is to buff in a sealed room seperate from the rest of your shop. Buffing dust is extremely fine and finds its way onto and into EVERYTHING.
