Look in "Arms and Armour of the Crusading Era" by David Nicolle, the European volume (there's also a Middle Eastern book). There are several in there including one drawing of a European wearing a pair. While his book is line drawings, he gives the source for the original work.

Honestly, get someone else to do it. A local taxidermist might be glad to get the work if you catch him in the off season. I've had a lot of friends try the quick no-work methods, and none of them had much success.

Most likely the hair is going to slip or shed on a deer no matter who does it.
