Maybe it's cheating, but I use a stainless steel canteen in the appropriate shape and wrap it in leather using the techniques shown in these tutorials. With some creativity you can hide the steel spout with leather, and no one has to know... With the costrel shown in the OP, you can use a wooden on...

Thorgrimr did mine...it was nice, but took a LOT longer to get than was previously noted by him. Still, it is really nice- although the wooden stopper doesn't quite fit the mouth- if I hold it upside down, water will drip out but it is a nice finished piece and it wasn't too bad of a price.

If he does go that route, I'll have to bow out, unfortunately. As for clothing and armor, you'd go with standard late 12th C to early 13th C stuff I'd think. How is your sizing measured? You mention the red gambeson is a M but that doesn't mean much by itself. What type of closure options are you offering?
