In my experience a bit of extra mass is your friend with regard to SCA helmets. Helps absorp some of the blow since all rattan weapons are essentially clubs-apart from regular spears, of course.

Polar Bear Forge sells a nice mitten gauntlet kit for not a lot of $. It has a bell cuff so you'd have to change that. I know Forge of Svan makes leather covered mitts.

I modified a Windrose chinstrap by adding two more points, essentially making it a four point system. I use nylon clips for the added points to make it easier to take the helmet off but it still takes a little while. Not 10 minutes but I'll trade that for more security. I believe I asked this a few months ago. I don't recall getting a response. It seems your best bet would be finding a shop close to you that does plating for car parts,etc.
