Thorvaldr does leather gorgets, as does Sir Gavin (Kilkenny) and Magnus of Dark Wyvern.

You should do a quick search of all three before you decide.

I can't make any recommendations, but that helm is in the Germanische National Historiche Museum in Nurnberg, if I recall correctly. I might have some better pics someplace. I will try to hunt them down.

I am glad to know where the name "goofy foot" comes from. It might also be parallel evolution.

When I was coming up, Iron Chicken was a form of defense when knee fighting. The sword and sheild are up and outside, like the wings of a chicken.

Yeah, you want thumb protection and finger tip protection under a center grip. A normal half gauntlet doesn't really protect the exposed parts of the hand. There are a lot of ways to do it.
