Like Mattmaus said. Regrind the blades. I had trouble with chipping stainless but not with 14 ga. mild. I also bought replacement blades so I could switch out blades during a job and regrind later. Maybe you could make metal/leather gauntlets that look like maille? Either stamp the metal plates or tool some leather to look like maille. I have had luck using etchant from Radio Shack. I have tried both sharpies and wax as resists with decent results.
Others can suggest even better etchants though.

I have used both cold blue I bought at Walmart (for cold bluing guns). And I have oil blackened things by heating the metal and burning oil onto it.

These are not for combat so I made them from 20 ga. stainless. These are for a customer.
