Well, if my conversion scale is correct .060 is the same as 16 ga. So if you could get anywhere from .048 (18 ga.) to .060 (16 ga.) you should be good for stuff to practice with. 15 in. wide would be plenty. What do you mean by emboss? Are you talking about repousse or chasing?
Here is a site with a quick demonstration of some repousse work. Same principle on dished surfaces just be sure to fill with pitch.

I make mine. I just use a drill to make a divot in a bolt. I either set the bolt in my pritchet(?) hole in my anvil or clamp them in a vice.

You could check out the local pawn shops for the style of ring you want. Take it to a jeweler and have them set different stones in it for you. Most can even change out the prongs(settings) if they are too large/small for what you want. There have been sales here where they will change the settings ...

Spaulders. They have dishing, leather articulations (front and middle), and sliding rivets in the back. Good all around first project.

I carved both my and my wife's wedding/engagement rings. I got some jeweler's wax and carved the design I wanted.
