Consider that you are sitting on a horse and someone is swinging a sword or charging with a lance at you. Which way would the lames of the tassets be oriented to best advantage?

I prefer to use Harley Davidson long cuff gloves.
Try using a leather "washer" under the head of the rivets. This may help prevent pull through. Also use the widest headed rivet you can.

Hard to tell exactly. But it looks sort of like the dish for the shoulders is too low and too bowed in the center over the spine. Keep in mind that annealing stainless is different than annealing mild. You quench most stainless alloys rather than slow cool them in my understanding.

Oh, I almost forgot. Make sure you take into account that you will need to make the plates way oversized before forming. Adding the creases and such will "suck" in metal from the side and make the plates much smaller. I hope that makes sense.

I would use the assemble with bolts method. Once bolted together I would draw all the lines on so everything matches up. Then dis-assemble and form each plate double checking often to be sure things still match. But different things work for different people. I also prefer Clecos to bolts. Just quic...

Keep in mind that it will work tons better if you dis-assemble it as much as possible. Less chance of splotches and drips. Plus you can really clean those tight spots.
