The 7.5 is my personal favorite as well. It will punch through anything I normally deal with and I don't need a cheater bar to do it.
I have three whitneys each with a different sized punch in it. I hate switching out sets.

I like to use sheets of acetate (similar to overhead projector sheets) and used X-ray film. I get the acetate from a Printing company and the film from the quality control guy at a foundry. Place the wrist over a ball stake and gentle use a rubber mallet to get a bit more dish to the lames. Looks great! To get a bit more forward bend try dishing the wrist lame more and adding a slight dish to the fore and aft lames as well. Hard to tell from the picture if you did that or not. I like to recommend spaulders as a great first project. Sinric has an excellent pattern in the patterns archive. You can definitely work stainless cold. Just a warning. You WILL waste metal at first and even after doing this for a long time. SZometimes patterns just don't turn out the way you expect...

If you are building them yourself, the easiest and best thing is to try cardboard mock-ups on the boots you will be wearing under them. You may have to stuff the boots with newspaper first. Hard to say just based off of pictures. I would guess the mid to low end of the spectrum though.
