I agree with ditching the rubber mallet. One of the reasons that your metal is only getting dished so shallow is because the steel is only being forced around the radius of the rubber mallet head and since those are more flat than they are round your pieces are much more shallower. I forgot to mention that I've seen a pair of pliers like Drogo made but these were super-high tech looking. The handles were gel and foam and had contoured grips for your hands.
