So, how does working stainless hot differ from working mild steel hot? Do you have to heat the piece longer to achieve that nice orange glow since it is stainless? Are you going to be fighting in any specific in this armour? If you're in the SCA, I'd recommend 16ga mild steel (or galvanized). If you've got nails or rivets that can be pushed through the leather, go through the leather from the outside and rivet them to the inside of the steel plates. Good luck....
