I'd recommend picking up a copy of Osprey's English knight 1400-1500. It's one of their more recent publications and has very good information spanning the time frame your interested in.

You may have a typo in the sentence above but just in case the jupon is worn over the armour not under it. In fact it will be important to do the fitting odf the jupon with the armour on for it to work a look correct.

There are several extant exmples from the 14th century that use this type of articulation. I've never made a set but in an earlier discusion Wade Allen said that either he or Vallerious ( sp?) had used this approach for SCA legs and it worked quite well.

first Id figure out what my budget is and what period I'd want to portray. Once that's done look for reputable armourers with experience in SCA needs who have done similar projects in the past.

We've been using plaster bandages for casting body parts ( mostly lower legs for greaves) but these look like they might work better.

Overall I think your kit sounds rather Northern Italian. I've seen the various components your using in sculpture and painting from about 1370 throught he last 1.4 of the century. The sole exception being the splinted greaves- I'd suggest either greaves of hardened leather or plate.
