Johan, I agree that using multiple layers of linen is a possible way to do it. I prefer to use one heavier layer instead though. I have used the sandewiching method before and think it works very well. I think the problems are people tend to use to little padding and when you use the type of cotton batting needed it makes sewing it very hard as it is a good few inches pre sewing. I think the shoulders looks like three or four overlapping plates of rectangular shape with a neck guard. THe closest one to the neck with a plate rivetted to the edge. At hardware stores they have 3m non-abrasive sanding pads. Go for the most mild one and see how it goes. they connect to angle grinders and work good and quick against rust.
