On the stainless thing. Mild steel cold or hot rolled is closer by far to being historically accurate. Stainless is a different color and is much further from something that would be accurate then mild. Actually you're allowed to destroy up to a certain amount per day. Something like $1.37 or something like that. This is because the copper in a penny is worth more then a penny so at one time when pennies were made purely from copper (I think there was something like this with dimes at one time too)...
