Vervelles are appropriate, surely for earlier armets, probably later ones used different solutions to protect the neck, because maille can be grappled by hooked weapons to pull a knight down in the dirt.
I think that the "aventail" (i don't know if the name is adapt) is simply splitted in half.

The only thing i can say, is that a breast designed in that way, will fail in it's main purpose: deflect blows toward the sides. This will bring a lot of them just in the middle.

There is a difference between footman and horseman armour, in the first you can find solid riveted plackart, in the second it will allow for some movement via sliding rivets.
