Cotton is crap, just stay away from it. Linen is really absorbent and unlike cotton linen will not cling to your body from just a little wetness like cotton will. I would never ever mark someone off for using 410 instead of mild steel as mild steel is n equally poor approximation of period material. He almost certainly wouldn't have had a writing table. To be lugging that around you'd likely be lugging a clerk to write on it. A slope is an idea cause he might not have had it but it fits what you want. He'd probably be more likely to have a small trestle table or some such and just write on that.
