If you can post pics of your work, we might be able to give slightly better advice. I find that by starting on the outter area of piece I am dishing and working towards the center, dishing until the piece is the full depth of the shaping surface, and then working the edges on a raising stake to form...

Here they both are, embossed, shaped, and hardened. For me, I have found that a shield the width of my shoulders and the length no longer than form chin to crotch is perfect. Especially with a heater with all of the coners to catch incoming shots.
