I think you're all missing the point. A Templar force would have a 10:1 ratio of sergeants/specialist troops to mounted knights. While there would certainly be mounted cavalry (knights, esquires, turcopoles and sergeants) you would also have a screen of infantry. So in a force of 10,000 Templars, on...
