assuming US standard for Steel
1.5mm is about 16 gauge, 2.0mm is just over 14 gauge
2.5mm is right between 12 and 13 gauge.
please note the SCA marshals handbook did away with gauge at least a decade ago.
There was to much tolerance and variations between gauge systems.

16 gauge made by me, a little light and good for youth and rapier.
14 gauge made by madmatt durable and a lot more refined.

You might try sending note to Russ Mitchell he was doing some Retanning for a particular project a while back.
It was I think starting with a raw hide or veg tan hide and working oil or fat into it over time.

You might have luck finding manuals online or contacting the manufacture for them.

I suspect they are the corner brackets for the sleeping compartment.

You may also try talking with Mac, pewter tends to darken over time.

A lot of it comes with pratice and mockups in similar materials. Tag, poster, or puck board, linoleum, and such can work to reduce refinement as you build. At times you can draft plates as you go. A lot depends on the alloy and temper.
It may work harden a lot faster be more difficult to punch/drill or just be a little harder to shape.
any markings on the stainless that may clue us in on alloy would help refine the answers.

I would look for something cheap the can simulate leather and use that for a mock up.

Flat rate and regional flat rate boxes are your friends.
With something like railroad track use saran wrap or plastic bags and spray foam.

Pricing will be all over the place depending on what your looking for. starting will be around $20-35 just for leather vambraces, splints would be another $20 for mild steel. The pricing goes up from there. hardened leather, spring steel, stainless, or TI, specialty design and tooling adds up quick.
