You're going to need to narrow it down a bit more than that. Of any century you could of chosen you picked the one with arguably the most dramatic changes to armour. To top it of you're going to need to give an area of interest as well. Byzantine or Norman? 1302 or 1383? If you do that I'm sure you'...

Just a comment from the sidelines, and I could be way off since I have no knowledge of metal stamping.... Could you put two plate designs on one die? Assuming you had relatively equal orders on the plate types this might be a good solution. (or an idiotic idea from from the ignorant) Just a thought....

Typically fire bricks are branded as such. "The Blacksmith, iron worker and farrier" has a nice section on forge building that might be particularly helpful to you. I got my copy at the local bookstore, might have it in your neighborhood as well.
