Actually Donasian, I did a bit of researching on this after this post came up and found out a few things that at least the modern thatchers are doing and none of them are putting on 3' of reeds. They typically put on around 6" to 8" of reed but since the courses are overlapped all areas of the roof ...

Thanks Konrad. Actually a couple of things made me not concerned with the knee issue. One, though now the knee is a bit ambiguous I don't think it will be at all when the boot is worn in.
