If you're going to do it with plates, I would suggest steel. Leather will get bulky looking fast.

If you're just doing a leather torso, and then covering it in a shell and using rivets to simulate a brig, then that would probably work.

But for a true brig, metal is better.

I'd just follow the fan suggestion myself. Leather never being totally uniform, you run a risk of a couple spots hardening up with the rest staying un-hardened. And I don't dye damp leather ever.
