In period I think the points themselves were made of braided, or woven linen thread. Historic Enterprises offers these kind at a pretty reasonable price. A decent substitute are woven boot laces. I use them and they work well. Approx. 2 bux per pair at any shoe store.

This type helm looks REALLY cool with a mail "aventail" to cover up the back and neck plates and attach to the bottom of the pot helm. It gives an overall look of a crusader era pot helm with face plate with a coif worn underneath it. Very cool.

The article on Amalfi in the posted link says the paper mills of Amalfi were founded in the 12th C copying paper making methods learned from the Moors. It also says people came to Amalfi for the paper from all over Europe, so I'd say although Vellum might have been more common in the 13th and 14thC ...
