Lamellar is appropriate for a Byzantine portrayal of that era.

The idea that adopting Byzantine arms was particularly popular among Latin crusaders, while widespread in the SCA, is highly conjectural and supported by very little (if any) evidence, AFAIK.

Everything Lawrence said, plus: The biggest trick to using a jeweller's saw is you want to keep it as close as possible to exactly vertical as you are sawing. I've never actually done this; I'm making it up as I type, so take it for what it's worth. I might try snipping a small patch of the same canvas and slipping it under the tear before gluing and pressing the tear back together; then touch-up paint the whole area. Unless the canvas is really thick, th...

I generally don't drink enough water when fighting, so wherever we go for dinner, I end up inhaling a pitcher of iced tea before the food gets to the table.

Steak is best, but I'm up for wherever the crowd wants to go, as long as I get my massive rehydration dose.

I used to have a few buddies who I'd fight "tomahawk" style...single-weapon only with matched longish-hafted and smallish-headed axes. This was wicked fun, but only if matched, it would suck azz against almost any other weapon form.

Maces can definitely be used effectively in SCA single combat; I used a mace the first time I made it to the final 4 of a tourney and I know several knights who use them.

I have also seen smallish hand-axes used, but less effectively.
