Beef jerky is good (or venison if you can get a hold of it). Keeps well unrefrigerated (provided it isn't of the teryaki -spelled that wrong- pursuasion) and is period for a good part of Europe.

This lego dude has a "Kettle-ish" helm that he came with. I can probably simulate a coif on that pretty easily - though I probably could make a greathelm, using a pencil eraser for the form
