Go with quartersawn lumber! If you can hand pick your boards you may be able to find some quartersawn ones as a byproduct of modern sawing technique. the way lumber is cut now ( not quartersawn ) is one of the biggest reasons that boards warp so badly. Thicker boards might help. making a single piece table top with a cleat running across the boards would help but not good for the living history goal.... On the spear and the CoP; the Weapons that made Britian show on armor did a fantastic test on a man with a lance on horse vs a CoP; as I recall even at full speed the spear barely went through the proper 3 layers of plate, maille, and padding. The amount it went through would create a cut not a lar...
