Yep. The cold water trick has helped me get through a lot of hot days at Pennsic.

I've worn one for years and love it. They are not thick enough to replace the padding in your helmet, but will give you a bit more protection. The youth gloves that I have are pretty bulky. Those almost look like the newer generation of street hockey gloves which didn't have quite as much protect as I would like. Though for that price it might be worth checking them out.

I wear youth lacrosse gloves under my gauntlets (I have small hands) and they work great.

Omarad is correct. Thin rattan with foam padding will be the default. However I am looking into other materials such as silflex. In Atlantia the current minimum age is 6. Probably the only consensus that you will hear on Pennsic battles is that they don't start on time and the handshake thing didn't work out.
