As many times as I have looked through TOMAR, I never really paid attention to the Insenheim Alterpiece. Then again, I wasn't thinking of quilt lines before either. But I find the quilt lines shown in this piece to be quit interesting.
I might take a look at different small things like fleur de lys, etc just find a more Germanic influence. I find your idea of the small embelishment at the end of the quilt lines to be worth looking into! Its such a subtle embellishment.
I'll also consider repeating the circular lines of the shoulder onto the body, meeting in the middle of the body.
Probably what Ill do when the whole pattern mock up is completely sewn together, I will take a picture with it on me in a straight on shot, print it out a few times and draw on it. Once I find one I like, I will draw it on the mock up just to see how it looks and what changes, if needed.

There's another copy of the same work at the Morgan Library from the 1340's but Corsair search engine has been down for a few days. Manuscript Miniatures has one page, but not the previous pages showing the aketon/gambeson/arming coat.
