Make a roman helmet like you normally would, add a bargrill on the front that stops the cheek pieces from going in, and attach a grill to the back.

notice the bottom horizontal bar in the grill slide through the cheeks and it fixed into place by two cotterpins. the back is sorta splinted to take some weight off. If I can find my pattern, I will scan it and post it here, but I dont think i have it anymore.

Hmn,
Maybe I shouldn't start on this fight again...
but...
If you want a Medieval Roman helmet (ie; if you find it important and relevant to fit the stated objectives of the SCA) you really should go with one of the Romano-Sassanian style designs.
Something like this:
(put a question mark at the end of the URLs to actually see the picture)

or this:

For SCA purposes, just make the back and side plates rigid and (if you really wish to go without a period faceplate) add a bar-grill.
