Early period ...late roman shield ..how would blazon the animal around the boss?

Not possitive, but I don't think it makes a difference. Wrapping charges around objects when applying them to surfaces is left up to artistic impression. It is not necassarily emblazoned.

The shield, as shown, would be difficult to blazon.

You could, however, try for something like:

Argent, within a bordure gules, a sea-serpent in annulo azure.

Adding the stylized hurt (blue dot) in the mix makes it pretty impossible for "real" heraldic description.

Are you asking how to incorporate the boss into the blazon?

you don't have to. You can ignore the presence of the boss and simply blazon it as if it wasn't there.

Your best bet would be what Saritor gave you. If you want to submit it, leave the hurt out or make it plain.
