...Should linen and wool for chauses and braes be?

And what sort should it be? Like a twill, or flannel or worsted, etc.

And which is best for chauses (warm/hot weather), wool or linen? I'm guessing wool is better than linen in cool weather.

Linen wiks moisture away from your body, thus making you more cool.
Wool will keep you warm even if it is soaking wet.

Linen is cooler in warm weather, but, linen does not "form" to the body like wool does. Ie, linen foot hose will have baggy ankles because you have to make the ankle part wider to fit your foot through, while wool footed hose will stretch and reform.

Light wool (the key word here is worsted) will still be quite comfortable in warm weather. You want the lightest, most finely woven wool you can find. It'll be plenty cool in the summer time, and more durable than linen.
