I am looking for some good sites with cheap jersey wool, linen, and cotton velvet in a color other than black. Anyone got some good sources?

For wool, there really is only one way to go in my mind, and that window of opportunity is right now.
Normally, fabric stores update their stock twice a year, and right about now is when they're getting rid of all their winter stock. Check out some stores in your area before you decide to go online- odds are that you can find at least three colors for as little as $3 a yard.
There is only one problem: usually there are only remnants available. If you want to make a tunic or something large, you'll probably have to get it in two or more pieces.
This is also assuming that you're in the northern hemisphere.
As far as linen goes, I usually just check the stores about once a month. There are sometimes sales on linen, for the same reason: I've gotten it for $3 a yard before as well. Just be sure to check the fiber content. Real linen is pretty easy to spot when compared to that poly/cotton tablecloth crud, but there are some blends that aren't 100% that can fool you.
I can't help you with velvet... if I can't safely get beer and mud all over my garb, I tend not to wear it.
