What was common jewelry for a man of stature at the time, specifically in the HRE/Germany?

Rings, definitely. You can find some relevant examples at http://larsdatter.com/rings-4.htm
Thick gold chains appear on some men, too:

A hat badge; see http://larsdatter.com/hatbadges.htm for several examples.
A nobleman of significant stature might be a member of an order of one sort or another. http://larsdatter.com/collars.htm shows portraits with men in collars of orders of knighthood (including a few Holy Roman Emperors in the collar of the Order of the Fleece), but there's other orders represented in pendants and other jewelry in portraits at http://www.nationalgallery.org.uk/paint ... t-of-a-man and http://commons.wikimedia.org/wiki/File: ... tein_2.jpg
