There were no sallets in the 14th century, they come about in the late 1420s or early 1430s. There are standards (collar) of maille and there is a tight fitting mask of maille (which I think Signo is talking about) that could be worn in this era; never seen or heard of a aventail on a sallet. My Google-Fu may be weak, but I've come up with nothing. I know it's almost always a sallet/bevor combo, but I've heard tell that sometimes (maybe in the 14th century?) that an aventail was sometimes worn with a sallet.
