The reviews on that particular piece are rather low. The Luttrell Psalter by the same author has better reviews. Is there much difference? There's a recipe for a hardtack-like biscuit in the Manual de Mugeres, but that's 16th century -- may not be quite early enough for you.

-Belt materials. When looking at surviving artifacts it seems there are a lot of linen belts. I had thought they were mostly leather but it seems like many were fabric instead. I carried Wil's helmet for a demo once, and I didn't get a special stick. I feel cheated. King Rene didn't say anything about special sticks. He just said to use lance truncheons. BNF Français 2692 has a helmet carried by hand by one squire who's vanishing into the crease between fols. 46v and 47.
