Clean, dry sawdust has been recommended. Some woods may be better than others- hardwood vs. pine? (Pine sap on your mail-sticky!) Avoid anything acidic, like black locust.

For an historic continuation of the "Z" plan, see Bents' Old Fort National Historic Site in Colorado. Stone- It's nice if the site can be quarried, or quarries are nearby. I would consult "Timber Castles" by Robert Higham and Phillip Barker, and build the smallest example I could find reasonable historic data on. Maybe something from the early Norman period, or a tower house in a ringwork, or equivalent.
