I've been told that:
14 gauge mild steel = 16 gauge stainless
This is correct, right?
If so it basically means that for stainless you can always go 2 gauges lighter than if you were using mild steel.
Likewise, what would be the match for the following three:
14 gauge mild steel = ?? gauge brass
14 gauge mild steel = ?? gauge titanium
14 gauge mild steel = ?? gauge bronze

You ask a dificult pack of questions.
Unfortunately the best answer is hat you wiill need to conduct tests on the brass and bronze that you can get in your area.
Brass and bronze have radically different properties based on which "details" of the alloy formula the makers are "pushing" in your area.
Also, all brass and most bronze is far more brittle then steel when it is work hardened.
frankly I think you had best get some scrap and conduct a seriese of drop-weight tests.
I can give you the details for constructing the testing-jig and the ways locals came up with to annylise reults.
You may find it much nicer to make the armour from steel and then either get it plated/coated with bronze or brass or alternately covering the cut pattern peices of steel with the material and then dishing and building as a unit.
