have any of you people seen any body with gamboised cuisses and a metal polyen for the legs. I think it sounds like a good idea.

Gamboised cuisses were very common through the 13th century. Polyns of different types were added as time went on.
I've seen a number of fighters in the SCA use them with success as well. I'm considering them for my new kit.
There are a number of ways to construct them. What I'm going to do is the sew then stuff method. Rather than the layer and quilt method.
To make them the way I'm going to you'll want to add a couple of inches to your thigh measurements.
What I'm planning is to sew the cuisses along the sides and bottom edge then turn them right side out and sew channels into the cuisses. Which I will then stuff with padding material. I'm going to use heavy wt. cotton and ram it down and pack it in. When I've got them fully stuffed I'll hand finish the top edge and close the inner seam. The reason for this is that I think it makes for a stronger leg defence though your milage may vary.
