I just discovered this site - http://www.viatores-temporis.de/info/zelte.html - It's got tents from right through the middle ages, but particularly good stuff from the late 12th century Liber Honorem Augusti of Peter of Eboli (Petrus de Ebulo), including one shot of people hammering in tent pegs just like modern ones, people pulling down tents, you name it. The text is mainly in German, but there are translating facilities (like Babelfish) on the Net if you want to read it.
