It shouldn't be hard to tell what type of shoe they wore under the sabaton if you know what type of sabaton/solleret they were wearing.
The sabatons, while primamrily made for defense of the foot, nevertheless follwed the prevailing styles of the day. When round-toed shoes were in fashion, round-toed sabatons went over them. Same with the pointy toed turnshoe.

Generally, they were of the same shape as the sabatons, because the armor covered stuff that was already there.
