Is kit really a good term to use when talking about a suit of armour? When I think of kit I think of everything, my spoon, tent, clothes, weapons, everything. Isn't harness a better term for just the armour.

Yep, thats pretty much how most reenactors 'call it'. Kit is a modern term, it comes out of the British army, and generaly refers to soft kit. Harness is a historic Medieval term, and in that context always refers to armour.
My harness is my armor, my kit is everything else related to my portrayal. Kit can include armour as a general reference, but harness never includes kit.
